How it all started
I grew up in the South of France where nougat has been made for centuries. The quality and taste of the nougat from home is simply unmatched from anywhere else & I've tried a lot! So, inspired by homemade traditional method, I made it my mission to create a nougat just as delicious as the ones I used to have in France.
Sheer determination and a lot of trial and error allowed me to develop nougat recipes that I was happy with and that could withstand the humid Auckland climate.
Because there are always new flavours to discover, or a flavour you crave more often than others, I make nougat in small batches. It gives me the freedom to be creative with flavour combinations. My mood, the seasons, the wishes of my nougat lovers all influence what I make.
